Poria (fu ling)

Fu ling is diuretic and calming and supports a balanced hormone system. In this dish shiitake supports immunity.

Ingredients

  • 300 g brown rice
  • 875 ml water
  • 15 g fu ling, soaked for an hour and finely mashed
  • 8 dried shiitake, soaked, stems removed, in strips
  • 1 tbsp soy sauce
  • 1 tbsp rice wine
  • ½ tsp salt
  • ½ tsp freshly ground black pepper
  • 150 g peas, blanched for 1 minute
  • Spring onion and strips of red chilli to garnish

Step by step

  1. Wash the rice until the water runs clear and drain.
  2. Bring the rice, water, fu ling, shiitake, soy sauce, rice wine, salt and pepper to the boil.
  3. Simmer covered for about 45 minutes until the liquid is absorbed.
  4. Stir in the peas and garnish.

Tips

  • Instead of peas you can use carrot, celery or pepper.
